So after a late night or early morning, depends which way one looks at it really, (just for the record no alcohol was involved in any shape or form) my taste buds were screaming out for somehting with a little salt.
So after trawling throught he fridge, I found some smoked salmon, roquette leaves and a couple of spring onions.. Sorted
And as its the new year, I got a bit of an urge to make it as healthy as possible.
After seperating 4 eggs (Only used the white, see healthy bit), i sliced up 2 spring onion, added to the egg whites along with 4 slices of chipped smoked salmon and a handful of roquette leaves and a splash of almond milk (more of the healthy bit) and whisked well
I poured the mix into a warmed ( but not hot) non stick pan and baked in the oven for 9-10 minutes at 200c. Remove form the oven and allow to cool slightly before turning it out onto a board…. Can be eaten warm or cold with a squeeze of lemon… Sunday morning breakfast.. enjoy
