Sunday Morning Brunch

Okay, So its Sunday afternoon, and I was feeling a bit peckish after church. It was a good lesson this week, given by Ken Baker… Next week should be a good one too as yours truly is preaching… the message ” Courage”… Anyway as my tummy was rumbling, I checked out the fridge to see what we had and as is always the case on a Sunday not much.. \i didnt want to stuff myself as I am cooking lunch at a friends house later this afternoon

Back to brunch, finally decided on poached eggs, toasted soda bread ( my wife makes the best) some mashed up avocado pear and grilled tomatoes, yep thought to myself that should keep me going…Toasted soda bread, (also a great way to use up your stale soda bread), makes a great base for this filling breakfast, using avocado as an alternative to butter. Rich in heart-friendly, mono-unsaturated fats, avocados are also a good source of protective vitamin E, which is excellent for skin. During the winter months it’s important to get a boost of vitamin D – the sunshine vitamin – and eggs make a valuable contribution. Plus only 385 calories

What You Need:

  • 2 tomatoes, halved
  • ½ tsp olive oil
  • 2 eggs
  • 1 small ripe avocado
  • 2 slices wholemeal soda bread
  • 2 handfuls baby spinach

Let’s Get Cooking:

Heat a non-stick frying pan, very lightly brush the cut surface of the tomatoes with a little oil, then cook them, cut-side down, in the pan until they have softened and slightly caramelised. You can add a splash of Balsamic vinegar at this point. Now heat a pan of water, carefully break in the eggs and leave to poach for 1-2 mins until the whites are firm but the yolks are still runny.

Cut the avocado in halve and take out the stone, then scoop out the flesh and mash onto the  toasted soda bread with a fork. Spoon the eggs on top, sprinkle on some black pepper and add a handful of wilted baby spinach to each plate. Dont forget the tomatoes on the side.
