This week I am cooking – Smoked Cod Pie –

Tell me, is there anything that beats a home-made fish pie for flavour and sheer delicousness? Well here is my easy step-by-step guide guarantees great results. My Smoked Cod Pie is topped with a grain mustard mashed potato crust, super easy and one you will enjoy. Comfort Food at its best……

Try some Steamed Greens with Lemon Dressing to go with it, All you need with fish pie are some delicious, lightly cooked green vegetables. Just steam 1 packet of fine green beans, sugar snap peas & tender-stem broccoli. While they’re cooking, make a dressing with the zest and juice of 1 small lemon mixed with 2 tbsp olive oil, 1 tsp Dijon mustard and a little salt and pepper. Drain the veg when tender, toss with the dressing, then serve.

Avoid overcooking the fish when first poaching it – remember that it will be baked too.

Always check the seasoning – it can make or break a good fish pie. if you notice i didnt list any seasoning in the ingredients, smoked fish can be salty so make sure you taste at different stages and season as required

When you’ve added the sauce to the dish, let it sit 15 minutes before adding the potato to avoid overflow.

Flake the fish, though don’t cut it! You need tokeep it chunky.

Standing the dish on a baking sheet captures any spillages, and keeps the oven clean
