This Week I Am Cooking – Sweetcorn Pancakes

With pancake Tuesday just around the corner, I felt I should go with something for the season. Shrove Tuesday is the original name for the day. The word shrove is a form of the English word shrive, which means to obtain absolution for one’s sins by way of Confession and doing penance. So Shrove Tuesday was named after the custom of Christians to be “shriven” before the start of Lent. I like that word Shriven!!

My recipe for these corn pancakes couldn’t be easier. Bish, Bash Bosh and in your gob in less than 15 minutes, and it’s one of the easiest pancake recipes you will find, made with super simple ingredients and does not need a Gordon Ramsay level of cooking. These are a more savoury based pancake instead of the usual desert variety.

these pancakes can be eaten on their own, with a dip or salsa, or my favourite with some roast chicken, tomato jam and watercress. Or you could eat them with crsipy bacon and some poached eggs.
