Its been a hectic, stressful week, and when those weeks jump out of the blue at me there is nothing more I like to do than get myself into a kitchen, get some worship music on and make a risotto. It gives me time to unwind, to think and to pray. It is at this point that I must warn you, if there’s one dish you should never rush through, it’s a pot of risotto. The keys to a perfect risotto is time, care and attention.
Risotto is a traditional northern Italian dish where rice is simmered in stock until it reaches a rich, creamy consistency. And because it is thick and creamy, risotto is a popular comfort dish. The list of ingredients you can add to a basic risotto is endless. I am going to keep is simple with my mushroom risotto to which I add the baby spinach at the end.

So go on, give it a shot, get yourself into the kitchen, close the door, turn on some music, and pour yourself a glass of wine to enjoy while making your risotto. Don’t forget to let me know how you get on.
