This week I am Cooking Chicken Chaufa

Lets face it, we all have some left over roast chicken after the Sunday dinner. (well we do in my house anyway). I bet if you showed me your carcass I could find some tasty bits of chicken that most forget about or may not even know they are there.

Last Sunday, as you have guessed by now, it was roast chicken and it was only the 2 of us as the kids were elsewhere, that is if you can calll a 21 and 23 year old kids eh. Anyway there was some roast chicken left in the fridge and come Monday, I wanted to do something different with it. There are only so many chicken sandwiches that you can eat – whose with me on that.

A taste trip down to South America was on the cards with this simple yet tasty and healthy Peruvian dish, aka their version of fried rice. I am thinking that as the Incas originated from South Asia, this is how some of their techniques came to end up in Peru. And they ate duck, cuy ( guinea pig ), llama and alpaca meat along with seafood. Now dont be looking at your pet guinea pig for this recipe, I have already said we are using the left over chicken.

Chaufa was made to use leftovers and products we already have, that’s exactly what you should do. You can swap the rice for quinoa, add different veggies that you like. Let that culinary imagination run wild & be creative with what you have at hand so that you don’t waste anything. Just stay away from the neighbours alpaca, okay

And for a final tip add a squeeze of lime juice, it will set if off nicely, all that is left for you to do is listen to some panpipe music and think of peru while eating your Chuafa
