Mild Spiced Chickpea, Tomato & Coconut Soup

Storm Barra is fizzling out today, but it is still cold and wet out there. Well, it is here in Villierstown in West Waterford. They call this part of the world the “Sunny South-East”! I have a good mind to go and paint over the road signs that say that. Anyway, back in from my 5.5km walk, yes in the cold and rain I needed something quick, easy and warming. Opened the cupboard to find a few cans of tomatoes, chickpeas & coconut milk & with a little of bash and smash I threw together this tasty gluten-free vegan soup.

What I like most about this soup is how easy it is to make, some roughly chopped onion, some smashed garlic and open a few cans and hey presto within 30 minutes you will have a chunky bowl of soup – As we like to say in Ireland “there is eating & drinking in it”
